Two Week Challenge: Day 10

For day 10 I was making oatmeal for my morning meal and was really excited about it because I was going to add loads more pumpkin than yesterday and some pumpkin pie spice. I set my microwave to two minutes and went in to the bathroom to blow dry my hair... and then the power went out. My dreams of pumpkin oatmeal and dry hair for work were dashed. For a brief second I considered buying food when I got to work, which would surely mean I would be eating significantly less healthy items. But I pulled myself together and made eggs. The moral - push through the inconvenience that you sometimes feel by having to prepare all your own food, your body will thank you.

Breakfast:
1 whole egg plus 3 egg whites scrambled with taco sauce and a little cheddar cheese.

Conclusion:
Just as good as buying breakfast.

Lunch:
Grilled Veggie Sandwich on wheat bread with no mayo


Conclusion:
I didn't do as much cooking this week as I did last week so I didn't have a lot to bring to work for lunch. I was going to get a salad from the deli by work but decided this grilled veggie sandwich sounded better. It had zucchini, roasted red peppers, tomatoes, parsley, and feta. It was healthy and delicious. I didn't eat all the bread and that was a feat because this bread was soft and yummy.

Snacks:
Baked Sweet Potato
Strawberries
Baked Apple Chips

Dinner:
Garlic Honey Lemon Marinated Chicken with Caramelized Brussel Sprouts 

Conclusions:
This chicken sure is yummy, especially with a squeeze of lemon over it after cooking. I cooked mine in a pan this time instead of on the grill and it was equally as delicious. The Caramelized Brussel Sprouts blew my mind. I have the leftovers for lunch today and I'm so excited. I was so hungry I didn't take any pictures, but the recipe is from Eat, Live, Run so head over there and check it out. It's super easy and quick! I made some changes - mainly reducing the sugar by almost half, upping the garlic (3 cloves), a healthy sprinkle of salt instead of a pinch (salty sweet combo is delish!), and adding a squeeze of lemon at the end. I highly recommend trying this recipe, it will make eating your veggies a delightful experience!
