Favorite Foods Made at Home: Meatball Sandwich

Meatball Sandwiches are one of my top 5 favorite foods. Along with tri-tip, sushi, pizza, and cheese enchiladas. I'm a simple girl. Throw together something steaming hot with cheese, bread, sauce, and meat - and boom I'm in love. But with that said, I AM very picky about my meatball subs mainly because I'm picky about my meatballs. So when my Mom suggested we use my leftover Mozzarella Stuffed Meatballs to make our own meatball sandwiches, I practically hit myself upside the head for never thinking of this before! Um, duh! To be honest, I've probably mentally blocked out this idea of making my own meatball sandwich at home for fear of the meatball sandwich becoming a daily staple in my diet. Thanks Mom.



You'll need:
makes 3 sandwiches

1 par-baked french loaf or loaf of your choice
Optional butter and garlic powder
Tomato Sauce
Mozzarella cheese and parmesan cheese


Method:

Bake bread according to instructions for half the amount of instructed time. Meanwhile heat meatballs in microwave for 1 minute and place sauce in a pan over medium heat. Place heated meatballs into sauce. Carefully pull out hot bread and split open and cut into 3 equal portions. Butter and sprinkle with garlic powder. Bake for 2 more minutes. Take bread out of oven and top with meatballs, desired amount of sauce, and cheese. Place in oven until cheese is melty and bubbly and bread is golden brown on the edges.
